Caprese Salad "In My Kitchen"

I found some fresh mozzarella cheese at my local grocery store and I decided to make these. Just a little of black pepper and olive oil and yum. I had to buy the fresh basil, because mine in not that big yet. Plus, I wanted mine to flower to get some seeds to use for next year. I put the basil where kids seat on the cart and every time I looked at my grocery lists I can smell it. They smell soo good.

Bok Choy with Oyster Sauce

I can't think of anything to eat, I went outside to my garden and picked some leaves off my bok choy. It is cooked with olive oil, garlic, water, salt, pepper, and oyster sauce. Love it, the stems are still crunchy. DH ate two raw leaves instead.

Egg Salad Sandwich

This is DH favorite sandwich. He likes it swimming in mayonnaise. I like it with romaine lettuce and slice of tomato. (Do you notice that my hand is tan, yes indeed, even with all the rain we are getting I manage to put color on my skin...lol) A very simple sandwich with mash eggs, mayonnaise and white peppers ( I am using the all natural honey flax whole grain bread here). But since I made this for DH, there are only two ingredients (eggs and mayo). Sometimes I can get away with white peppers but he prepare not to have it. I read somewhere that peppers are good food blood circulation that is why I try to hide the peppers there for him. Don't worry about the cholesterol, I read at Dr. Douglass site that cholesterol are good for us and don't believe whatever FDA said about it. I can 't even begin to tell you about the food pyramid being wrong all this time. Oh well, it will be in another post.

What I love About Summer

A lot of fresh fruit to choose from. Not only that but I notice that summer fruits taste much better than any other seasons. And here is my strawberry smoothie by request of my DD and YDS. Only 3 ingredients: strawberries, plain yogurt, and honey as sweetener. You can also freeze the strawberries before making this, for thicker smoothie. This is my finish product. Somehow I can't find the straw for the picture. :( Want to have a taste, here is a glass of my strawberry smoothie just for you. Here is another favorite of mine. I eat a lot of fruit in the summer and sometimes I end up with stomach ache at the end of the day because I eat them right after the other. My stomach does not like it.

Bring your Summer Weekends to Life

We don’t have any plans going on vacations this summer. My husband is very busy working and trying to get all the work finish as they come in. We may not have too many of those when the economy collapse, which I think is coming soon. He is trying to take any calls he receive at this point. We don’t go away on vacation however, we are doing staycation. During my sister in law’s wedding by Delaware Water Gap river, my children can’t help but admired boaters, canoers, and kayakers passed by. They plead that they wanted to do it. And that exactly is what we use Charter internet for, finding an affordable boat rental to enjoy the water. You will be surprise on how much time we spend using the internet. It’s our source of information because we don’t watch television. There is so much information out there and all we have to do is type the correct keyword for it and they are available to us. Tuna Patties

This usually made with anchovies when my mother makes them back home. It consists of fish, chop onions, garlic, egg, flour, salt and pepper and deep dry in oil. I haven't really try baking them. I use this in sandwiches, wrap with lettuce, tomatoes and cheese or simply the old fashion way with rice, dip in soy sauce with lemon or tomatoes.

Beef Broccoli

I got so much left over broccoli from my YDS's birthday party I decided to make this. I saute onion and garlic with olive oil, add the beef until cook, then the broccoli until wilted and add the sauce. Which is made with water, salt, pepper, soy sauce and corn starch. Very easy right? Enjoy it over pasta or rice, whichever you prefer.

Bacon

Here are the example of bacon that are cook in a broiler and on a pan with it's own fat. The left one is cooked uneven in a broiler and very dry and the one on the right is cooked in the pan with their own fat. They taste very different and I like the one on the right. Excuse the pan they are dirty because I just get done cooking the bacon on it.

Keep Yourself Busy This Summer

Any plan for the summer yet? We don’t have anything yet as of yet, because I am still busy teaching and getting my kids enrollment finish. I am still waiting for 2 more orientations to do and making sure to pack everything we don’t need to ship out. Furthermore, my children are still small and I don’t think they can survive a week without their parents. We will be doing some camping before the summer is over. That is camping outside with nature. Not the type of camping that you will sleep inside a cabin. There are a few churches around us who offers day Summer Camps . I wanted my kids to learn about wilderness camps or adventures. Get themselves familiar with edible plants and learn how to survive the worst case scenario in the wild. And I found so many all over the US, Canada, Central America, and Australia. Is this what we call "basilog" back home?...lol. I do love eggs that are medium well, not well done. Did you know that eggs turns rubbery when over cook and they smell funny too? The fried rice consist of garlic, onions, salt and pepper. The egg is cook with butter and chewy bacon's. Enjoy!

Red Potato Salad

Here is my baby red potato salad. Nothing compare with red potatoes for a salad. I love it and I can really sink my teeth into. This is the same recipe I used from my first one here . I just change the potatoes. I like the skin with my red potatoes, you can actually see the red skin from the picture. This could be my entree for Ruby Red Tuesday, maybe next time.

Bacon, Eggs, & Toast

Did you know this breakfast took a while to get done? I had to start with bacon cook the whole pack, then cook the scrambled eggs and lastly the toasted bread. How does big families do it? We can't afford a grill top stove to have all of this cook at one time. I remember when I still work in the restaurant. I usually bring ingredients to cook for everyone in the morning and put everything on the grill. And we all eat together because the food get done at the same time. I cooked the bacon on a pan, and I can only fit 5 or 6 depending how big the bacon are. But I am feeding 7 people here, 6 pieces of bacon is not enough for 7 people. The scramble eggs I had to keep stirring to prevent burning it. Then the toast, I can only fit 4 in a toaster oven. Anyway, just writing my prostration here and out of my mind. BTW, enjoy.

Easy Dressing, Marinade, Dips, etc.

I always like to prepare food that are easy to make, less time in the kitchen preparing food and spending more time with the family is always a plus. I always make tomatoes and red onion slices with roasted garlic seasoned rice vinegar and soy sauce this is great for dipping smoke fish or as a marinade for any meat dishes, my siblings and my father loves it. Furthermore, you should try rice vinegar with hot chili peppers, so good with dry fish. I know not everyone is fond of dry fish or dried calamari but if grow up eating this stuff there is nothing like it. You will also find more Splash Tips using rice vinegars, wines, Asian condiments and pepper Jellies. If you have not try the All Natural seasoned rice vinegar with fish and chicken, try it this summer. I love cooking/grilling outside in the summer because my whole house will not smell fishy or any meat that I cook. Plus, my kids are always outside and enjoying the warm summer days.
