Pepper Steaks
What to do with a surplus of bell peppers? One recipe above. I just love the color of green, red. and yellow bell peppers. I cooked this with seeded and peeled tomatoes. I can't find the recipe right now, but I am sure you can find something similar if you google/bing it. I saute the cut-up meat in olive oil, onions, and garlic. Then add the tomato slices and wait for the meat to tender. Mixed in the peppers, cook until you reach the peppers consistency that you like. (I like mine with a little crunch left) Season with salt & pepper. I also add a few sprinkle of dried hot pepper flakes for some zing. It's delectable!
