Pepper Steaks

What to do with a surplus of bell peppers? One recipe above. I just love the color of green, red. and yellow bell peppers. I cooked this with seeded and peeled tomatoes. I can't find the recipe right now, but I am sure you can find something similar if you google/bing it. I saute the cut-up meat in olive oil, onions, and garlic. Then add the tomato slices and wait for the meat to tender. Mixed in the peppers, cook until you reach the peppers consistency that you like. (I like mine with a little crunch left) Season with salt & pepper. I also add a few sprinkle of dried hot pepper flakes for some zing. It's delectable!

Sauteed Asparagus with Bacon

Instead of prosciutto, I mixed it with bacon. It's very easy to do. You cook four pieces of bacon, removed from the pan then add chopped onions and minced garlic. Then you add one bunch of asparagus, cut about one inch. Add the cut up bacon, and salt & pepper to taste. Viola!

These is not an experiment. Whenever I get tired of normal cooking, I make it differently. I like bacon and asparagus and that is what I got. Sometimes I even cook all the vegetables in my refrigerator. Just mix them all in the pan and seasoned.

Pineapple Jam

Another copy-cat canning of mine. 😃 When it comes to american food I don't have my own recipe. Since everyone was talking about pineapples on sale what else am I going to do. Make stuff with on sale pineapples and here is one of them.

If I have a lot friends this thing will be a seller. But since i don't, well, this will be in my pantry until i eat them. I enjoy making things in the kitchen, who knows maybe I will open a little bakery in my house since this property is still considered a business property. Something to think about to earn the payment for my very expensive property tax.

Blueberry Scones with Lemon Glazed

Remember the group I told you about a few post back? Yup, I got the idea from them. The pictures of food and recipes they share looks really good. I need to make my own and try them. With this recipe, my youngest and only daughter like it. DH does not like anything with fruit, but he will eat it when someone else gives it to him. He will not eat anything I make. I am still mad at him about the pumpkin cake he got two years ago. Ha! I told him I can make it if he wants it. He said, "I can't say no." However, he can say NO to me with no problem. Thanks DH!
