Yeah! Summer

-how do I love thee -solstice birthday with my love -sharing birth month with There will be no apple pie, nor apple preserve for me this year again. This is the only apple I have from the three apple trees in my backyard. And I'm pretty sure it will fall before it ripens. :( Have a great first day of summer, I have a very lovely sunny sky today!

Apple Crisps/Apple Chips

Here is my first batch of apple chips. They taste really good but they all stick to the pan. I think I need to move them around while cooking next time. I used the oven to dehydrate this batch. I also have a dehydrator but the ones I put in it is still not dry. Some of them started sticking too. I added some brown sugar and cinnamon on all of them. And you can see they are all in pieces because it is so hard to removed from the pan. I loosen up the two that are not broken before they harden. Now to do more batch, I got so much apples.

Look What We Did

Our weekend turn out to be a nice weather. And this is where we spent it at...well at least the few minutes of it. Our kids had a blast and cannot stop picking apples. ( Click the images to enlarge ) We end up with 57 pounds of apples and my SIL hardly took anything with her. We still have about 40 pounds after she left. I better start drying, baking and mashing to preserve all of this. Would you like some? You can find more images in my other blog at " In This life ". I will be very busy and house will smell like apples until all of these are gone...I smell bake sale...lol.

Apple Pie

My FIL loves apple pie. He gets one of his grand daughter to bake her one. But lately she always forget, since they always comes to our house for holidays I decided to bake it for him. But will not bake it again after yesterday. I didn't know that he wants her to make it, I guess something for her to do on holiday. I just felt bad because he was asking her about it and she didn't bake any. Anyway here is my homemade apple pie. I made the crust myself. It's very easy to make. Trying to be fancy here with the diamond top shape. I used the pizza cutter to cut them. Pressed the side together. Foil to prevent the side from burning. Here is my finish product. Apple Cobbler

We went to our local apple orchard on October 12. We didn't stay very long because the kids filled up our bushel too fast. We could have picked more but we can't eat all those apples before they get bad. Anyway, today I baked another apple cobbler, since the one DH made a week ago wasn't that great. 4 medium tart cooking apples, slice (4 cups) 3/4 cup packed brown sugar 1/2 cup whole wheat flour 1/2 cup quick-cooking oat meal 1/3 cup butter, softened 3/4 tsp ground cinnamon 3/4 tsp ground nutmeg Heat open to 375°F. Grease bottom and sides of 8-inch square pan with butter. I used ceramic baking dish and it works fine without butter. Spread apples slices in pan. In medium bowl, cream the butter an sugar until well blended. Add the rest of the ingredients, e.g. flour, oats, cinnamon and nutmeg. Mix until blended, sprinkle over apple slices. Bake for 30 minutes or until toppings is golden brown and apples are tender. Serve warm, you can also serve it with ice cream.
