Steam Broccoli & Potatoes with Cheese

When I don't feel like cooking rice for myself, this is what I make. DD and I are the only two who eats this at home. I only scoop the Velveeta cheese on top without softening it first. However, those cheese are enough for the left over. All I have to do is warm it up and all the cheese are melted. Enjoy.

"In My Kitchen" Homemade Pizza

I cannot believe how easy is it to make a pizza from scratch. I used 3 cups of flour, 1 packet yeast, some sugar, 1 tbsp olive oil, and 1 tsp salt. I dissolved the yeast in 1 cup of water with a little dash of sugar. Then I mix everything, and knead for about 5 minutes, made it to a ball and cover with a little olive oil. I let it rise for an hour and cut the dough in a half. I stretched the two pieces to fit my cookie sheets. I added sauce, shredded mozzarella cheese, and some pepperoni slices. Baked in 450°F oven for 15 minutes and here is my finish product. This is my very first time making it, in my whole life...lol. Two of my kids enjoyed it. DH said that I needed more sauce and cheese. I was having second thought actually before putting it in the oven. I was looking at it and thinking that maybe more sauce and cheese will be needed. Sure enough I was right all along. Caprese Salad "In My Kitchen"

I found some fresh mozzarella cheese at my local grocery store and I decided to make these. Just a little of black pepper and olive oil and yum. I had to buy the fresh basil, because mine in not that big yet. Plus, I wanted mine to flower to get some seeds to use for next year. I put the basil where kids seat on the cart and every time I looked at my grocery lists I can smell it. They smell soo good.

Breakfast Sandwich

Like I said in my last post, I will try the breakfast sandwich my ODS makes with my omelet. With this sandwich I added bacon and I used Provolone cheese. Very filling I may add, I almost couldn't finish the sandwich and the bagel is small, it not the same size of what you buy from Dunkin Donuts (much smaller). I used bagel, scramble eggs, Provolone cheese and bacon. I melted the cheese over the eggs in a toaster oven.

Meat Lasagna

I don't even remember when was the last time I made some of these. I think before my blogging days, because I don't have any pictures on file. DH never liked ricotta cheese that is why I hardly makes this. Not to mention he dislikes eating pasta. Oh no, he loves them so much that is why he hate it. I wish it work the same way with smoking. Anyway, this is what you will need. I actually forgot to add the eggs in the picture. I just realize it when I was already cooking, and I can't take another picture because I used some of the ingredients already. Here is a piece for my dear readers and visitors. I also wanted to ask what I can use instead of ricotta or cottage cheese when making Lasagna? I wanted to make this at least twice a month, the only thing is that DH is not very fond of Cottage and ricotta cheese however, he is fine with Mozzarella and Parmesan. Can I just use those two cheeses? Will it taste bad? Thank you for the answers in advance.
