Pepper Steaks

Image
What to do with a surplus of bell peppers? One recipe above. I just love the color of green, red. and yellow bell peppers. I cooked this with seeded and peeled tomatoes. I can't find the recipe right now, but I am sure you can find something similar if you google/bing it. I saute the cut-up meat in olive oil, onions, and garlic. Then add the tomato slices and wait for the meat to tender. Mixed in the peppers, cook until you reach the peppers consistency that you like. (I like mine with a little crunch left) Season with salt & pepper. I also add a few sprinkle of dried hot pepper flakes for some zing. It's delectable!

Sauteed Asparagus with Bacon

Image
Instead of prosciutto, I mixed it with bacon. It's very easy to do. You cook four pieces of bacon, removed from the pan then add chopped onions and minced garlic. Then you add one bunch of asparagus, cut about one inch. Add the cut up bacon, and salt & pepper to taste. Viola! These is not an experiment. Whenever I get tired of normal cooking, I make it differently. I like bacon and asparagus and that is what I got. Sometimes I even cook all the vegetables in my refrigerator. Just mix them all in the pan and seasoned. So, what food do you cook without recipe? 😋

Bread & Butter Pickles

Image
I made two different ways. DH pointed out that the slices are hard to fork out of the jars. My next batch was wedge bread and butter pickles, of course. I will not post the ingredients here because you can easily find everything online. I made one batch of slices, and two batches of wedges because DH preferred the second one. I was thinking of making more but my cucumbers had others plans. They ripen on me when I wasn't looking for a week. hehehe

Filet Mignon Wrap in Bacon

Image
Actually I think this one is mignonette. Smaller than regular filet mignon hahaha. Yup, i just follow the direction on the package. Eight minutes each side, and done. With stir fry vegetables and rice with turmeric on the sides.

Eggplant Omelet

Image
These are made with Asian eggplants. You start by removing the skin by roasting or simply put them on your stove top. Turn the burner and grill the skin of the eggplant. Flatten the eggplant after removing the skins. Try not to separate them too much. Dip in beaten egg with salt and black peppers. Cook on a medium high pan with butter, olive oil, or coconut oil. Just like above. With these recipe I added ground pork sauteed in garlic, onions, and tomatoes. I added them right after putting the eggplant on the fan. Then I poured a little bit more beaten eggs. You can refrigerate the left over. Just warm it up in the microwave or warm pan with butter. Make a sandwich like a vegetable burger, with hot cook rice or by itself. Add cheese or ketchup on top.

Veggies with Shrimp

I had enough of winter and my mind is wanting some summer, well anything warmer than 32 deg F is very much appreciated. When I opened blogger the blogs I am following shows up. And one in particular stands out because she is already prepping her allotment to plant, plus some of her bulbs are already out. I am so jealous, I missed my hometown. Anyway, here is my dinner tonight. Stir fry veggies (broccoli/carrots/cauliflower/red & green bell peppers) because I miss warm temperature already. Mind you it's MARCH and I still have a foot of snow on the ground and it's snowing right now while I am typing this. I like my veggies with some crunch in them. Looks pretty doesn't it. Pictures are taken by LG G2 camera.

2014 Sweet Relish Batch

Image
All the vegetables I am using came from my garden. Yes, I'm supposed to grind the vegetables but I opt to chopped them all up instead. The only thing missing are the onions. I was cooling it down inside the fridge before chopping them. Soaking in hot water with salt. Boiling for 30 minutes. Preserve in a hot jars. I made six pints this year. Tomato soups next, as soon as all of my tomatoes ripened. Goodbye HFCS, most sweet relish have them except for Wos-Wit Pennsylvania Dutch Foods brand. Hopefully they can keep it HFCS free until they can. Thumbs up to you for making products that are healthy for human consumption.

Salad

I got very hungry all of a sudden after doing my everyday workout, ten minutes for hard boil egg while I am rinsing & cutting the vegetables. Quick enough for me and very filling. Garden salad with egg & Caesar dressing. Just to clarify, I workout so that I can eat everything I want.

Eggplant Rollatini

Just like the restaurant makes. And yes the process is very time consuming. I started the fillings, the sauce, & everything I needed the day before to save some time the day I am serving this. But the taste...YUMMY! Try it out. I would like to thank someone for sharing this recipe. Sorry, I can't remember who you are. Pic was taken before I added the extra sauce & cheese on top. Steam Broccoli & Potatoes with Cheese

Image
When I don't feel like cooking rice for myself, this is what I make. DD and I are the only two who eats this at home. I only scoop the Velveeta cheese on top without softening it first. However, those cheese are enough for the left over. All I have to do is warm it up and all the cheese are melted. Enjoy.

Eggplant Rollatini

Yes, I love, love this eggplant recipe. I found this at our friends house on one occasion and I had to try making it. Which I did. Of course this is my very first try and not as good as the one in our friend's house. I just need to adjust the cheese measurement I put in mine according to my taste. However, I am the only one that eat a lot of vegetable in my household. I probably eat enough for the whole family...lol. I definitely recommend "eggplant rollatini." Just type the name on your search window and you should find plenty of recipe.

Broccoli Salad

Image
Another recipe that is over due. I got the recipe from DH friend a long time ago and I never really tried very hard making or buying the ingredients. And finally, I got some made. Of course DH love it because he knew how it taste. 1 pack cooked bacon (crumbled) 2 crown broccoli 2 tbsp balsamic vinegar 2 tsp sugar 1 c mayonnaise Rinse the broccoli and separate the floweret. I let it set in the fridge until crunchy or rinse them in icy cold water. Mix the rest of the ingredients, pour on top of broccoli and mix until the dressing is well blended then add the crumble cook bacon. Yum!

Simple Meal

Image
With a flash. Without a flash. Pan fried in butter and olive oil ranch tilapia , saute beans with tomatoes (another fav of mine), and my very favorite, white rice. I cook a lot of this in the summer. You can see a few post of mine here with the same items on a plate...:))

Asparagus And Tilapia

Image
Little bamboo I called it, the first time I laid my eyes on them. It was my first time shopping in the US grocery store 21 years ago. I love them, especially with hollandaise sauce. However, I cook it with butter and olive oil most of the time. In the other dish is broiled Tilapia with ranch dressing marinade. Moreover, what is the urine smell after eating these little bamboos? I search online and found out that I am not the only one having the asparagus scent in urine. It's like eating jackfruit. Well, jackfruit have a sweet smell because it is a fruit. Anyway, study said that some people cannot smell anything when eating asparagus. I don't know if I can say it is a good thing or not. I really don't mind about the urine smell, as long as my family does not complain about it. Flushing the toilet right away eliminates the odor.

Napa Cabbage Salad

Image
3 packs Ramen Noodles (raw, discard the seasoning) 5 oz. sliced Almonds 1 butter stick I head Napa cabbage 2 bunches scallions (optional) 1/2 c Cider vinegar 3/4 c brown sugar 2 tbsp soy sauce 3/4 c Olive oil Break raw Ramen noodles into pieces. Saute noodles and almonds in butter until lightly toasted. Chop cabbage. Finely chop scallions. Combine vinegar and sugar in a sauce pan. Stir over low heat until sugar is melted. Combine with soy sauce and Olive oil. When ready to serve, toss all ingredients. When I serve it at home, I keep everything separated, and who ever wanted some, they can make their own servings. I like to keep the noodles and almonds crunchy. You should try this.

Food Trip Friday Entry

Image
Vegetables in coconut milk with fish...lol. My parents always make this when I was little. Yes, with rice, I can't eat it without rice...:)) One version of cheese steak that I like, mushrooms and onions. Sometimes I make it with red/green bell peppers and onions, or mushrooms, onions, lettuce and tomatoes. It depends what I have available in the fridge or my garden.

From My Vegetable Garden

Image
This is my very first harvest in my garden this year...in August? yes, I am not very happy about it either. I should be in the end of harvesting season already. However, I am still happy because I can have some fresh veggies that I love, even though there are too little of it. Some type of squash, okra/lady fingers, sitaw/long/string/yard beans with shrimps. This shellfish thing will bring me to hell...argh. Below is my DD showing how long some of my sitaw are. All natural soil, the only difference from last year was food scraps from my kitchen mixed with the soil. You will find some of the pictures in my other blogs. No, I do not copy it, I own them both...just to clarify if you find the same pictures somewhere...:))

Stuff Sweet Peppers

Image
This is my third time making this. I used red bell peppers the last I made some and you can see the images of that dish here . This time I blanched the peppers because DH was complaining last time that the peppers are not cook. And this time added some mozzarella on top too. I like it with cheese and I will make this with cheese from now on. DH only ate half of one and our kids ate the stuffings. I only wish they eat food the way I do. However, I don't have any problem with them when it comes with desserts. For more FTF entrees, please give Ms. Willa's blog a visit by following the image below. Have a great weekend!

Beef and Broccoli

Image
I usually buy the mix for Asian dishes when I cook. I was smart enough to look for the recipe for Beef Broccoli online and this recipe taste just like the mix. I found this mango in my local grocery store, and I just have to have a taste. I bought two and it was gone the next day. My mouth wasn't very happy but the rest of me is very much satisfied...lol. For more FTF, please visit Ms. Willa's site by following the image below. Happy cooking!!!

Stuffed Bell Peppers

Image
I got these bell peppers from my local farmers market for 25¢ each. They are not in the perfect shape like the commercialize huge bell peppers but I like it better. I'm not really sure if they are organic but I'm sure they did not use anything to make big or any pesticides. Today featured In My Kitchen is stuffed bell peppers. I stuffed them with ground beef, rice, minced garlic, chopped onion, Italian seasoning, salt & peppers, Worcestershire sauce and tomato sauce. DH is not very fond of it but our kids ate mostly the stuffing from it. Want one?
