Looking at Ted riding the Manta brings back memory the very first time I rode the Great Bear (or is it the Flying Falcon) at my local amusement park and having the same reaction. This picture was taken when I was still a slave of the corporate world. My company is nice enough to give their employees tickets to amusement/theme parks. DH loves chocolates and see what we brought home from Hershey Park that year. These are the days when we only have 3 little ones. We went to Hershey and Knoebels that year. Me hiding behind the 5 pounds chocolate bar. I wonder how much this 5 pounds chocolate bar today? It took him a while to finish this. He ate it until he got stomach ache. And he still do the same even now.

Feeling Secure

I never had the feeling of being secure since I saw a documentary about 911. Not because of what the media is telling the public about terrorist, merely more of what my own government is capable doing to their own citizens. To tell you the truth I don't have any type of security in my home. I trust my instinct and I know what ever I do to protect myself they will come and get what they wanted. I just hope I am not home when something like that happens. I live outside the city and I trust my neighbors. However, when I live in the city I always lock everything. And I forgotten my keys twice inside the house and I my whole day was ruined. I never like the feeling of other people going into my house and going through what I own. I had a few sliding doors that can be easily broken by rocks. And I thought about getting a wireless security system to feel secure. Meat Lasagna

I don't even remember when was the last time I made some of these. I think before my blogging days, because I don't have any pictures on file. DH never liked ricotta cheese that is why I hardly makes this. Not to mention he dislikes eating pasta. Oh no, he loves them so much that is why he hate it. I wish it work the same way with smoking. Anyway, this is what you will need. I actually forgot to add the eggs in the picture. I just realize it when I was already cooking, and I can't take another picture because I used some of the ingredients already. Here is a piece for my dear readers and visitors. I also wanted to ask what I can use instead of ricotta or cottage cheese when making Lasagna? I wanted to make this at least twice a month, the only thing is that DH is not very fond of Cottage and ricotta cheese however, he is fine with Mozzarella and Parmesan. Can I just use those two cheeses? Will it taste bad? Thank you for the answers in advance.

Ham Sandwich with Tomato & Lettuce

A very easy to make sandwich. Some cold cuts, lettuce and tomato slices. I know cold cuts are the best to eat, however they are easy to prepare. My favorite is Virginia ham cut thin. Sometimes I add Provolone cheese and mayonnaise with crunchy bacon too. Sometimes I eat it dry depending on what I like for that day or what I have available in the fridge.

Green Jackfruit Adobo

This is cook with turmeric powder (we call it mustard), coconut milk/cream and salt and pepper. I also mix some shrimp with this sometimes. Below is the images of green jackfruit and coconut milk. This the turmeric (my parents call it dilaw means yellow), I actually bought mine form the Asian store in Parsippany. I sliced them thin and dried in a dehydrator (back home we use the sun) and powder it under a mortar and pestle and run it through very fine sifter. My Dad is using this to ease his migraine he swears it work.

Seafood Tamarind Soup (Seafood Sinigang)

I caught DS stomach virus and I was sick Friday night and all through Sunday. Somehow I had a cravings for sinigang. I cook seafood in tamarind soup mix with shrimp and tilapia. And some frozen long beans (sitaw) and sweet potato tops (talbos ng camote), from my frozen vegetables from my last harvest. And since I was out grocery shopping Sunday (spreading out the virus...lol), I also put some romain lettuce in. After 24 hours of not having anything in my stomach this was the right thing to eat. Sour taste in my tasteless mouth was scrumptious. Here is the picture of what I made. Never mind the broken piece of fish fillet, it did not survive the cooking process (stirring process is more like it).

Cocoa Tree

This is one of the cocoa trees from my parents property back home. DH wanted to grow one inside our house. I'm not sure if it will fit. We probably have to keep cutting the new growth to make it fit however, will it fruit? This is organic and nothing had done to make it grow shorter. We don't even know where to get the seed to grow from...lol. (He wanted to make our own chocolate.) You can also see sugar cane and papaya tree in the picture if you know what they look like.

Awareness Training

When I was still working in a financial institution I have my eyes open for IT positions. I rather sit in the room full of computers rather than a room full of people. However, being new to the company, I never land the job and not to mention lacking the experience. I wish I have known about EC-Council before, I could have taken classes online for free. My company reimburses anyone who takes classes related to our job as long as we pass the course. However, it was hard to find classes online when I worked there. I could have an advantage over my competitions with IT Security even though I did not have the seniority. I suggest whenever your company offers any type of classes or seminars you should always volunteer to attend. In the long run, it would help you because they add qualifications to any jobs you wanted to do. I have attended a few about customer service when I was still working. This is not your regular pesto recipe for your pasta, meat dish, rice, or seafood. This is compiled by Dr. Thomas Stearns Lee, NMD at Naturo Doc . You can also find the ingredients at their store. And for more information on how to use this recipe please follow the link. 4 clove garlic 1/3 cup Brazil nuts 1/3 cup pumpkin seeds 1/3 cup sunflower seeds 2 cups packed fresh cilantro 2/3 cup flaxseed oil 4 tablespoons lemon juice 2 tablespoons Dulce powder Bragg's Liquid Aminos Process the cilantro and flaxseed oil in a blender until the cilantro is chopped. Add the garlic, nuts, and seeds, dulse and lemon juice and mix until the mixture is finely blended into a paste. Add a squirt of Bragg's Liquid Aminos to taste and blend again. Store in dark glass jars if possible. It freezes well, so purchase cilantro in season and fill enough jars to last through the year. Down South

I used to live in North Carolina a long time ago and enjoyed the seafood down there. Furthermore, once a month my friends and I goes to the dock to fish or catch crabs. Then I moved to New Jersey, not much difference about the seafood but big difference with the temperature. Technology is better because the city is just an hour or less drive away. I used to have a directtv package that was very affordable, I miss it a lot. Now we live in the boonies and it took a few years to have a high speed internet. We were so glad when it was finally available to us. We could have gone and get a Direct TV however, we are far away from the city limit and can not afford to get a separate bill for high speed internet. I know they have broadband services too, but money is the issue here. We are still looking at moving to Georgia as soon as we can. We are just waiting for my eldest son to go to college before we move. If we have direct TV, they can move with us because there is a Direct TV in GA. N

DD Birthday Cake

I think my FIL came up today just to give me my camera memory card back. They both look very tired today, I would guess being retired they should have so much time to rest. But in their case, more time to visit everyone they know. My MIL in the ohter hand is a night owl. I will not be surprise if she is tired because she is always awake all night and she goes to sleep during the day. SO, if she comes in looking very tired it means that she did not take a nap yet from the night before. Anyway, as I promise here is DD birthday cake. We took 1/3 of it home because most of the parents don't want to touch it. I don't blame them, if they are like me health conscious I will not eat it either. A very simple birthday cake. Have some before clicking away, there are plenty to go around.

Birthday Party for DD

My DD N turned 6 on Wednesday and we are having a bowling party for her in our local bowling alley. I don't really know how it's going to turn out because they are too little to throw such heavy ball to knock down pins. The whole thing is only for 2 hours and there are about 33 people coming both kids and adult. This is only part of her cake. I took the picture after we got home. My FIL has my memory card, he wanted to make a CD from all the pictures. I wish we could have it done in our house but our house is not that big. And if it rains everyone needs to come inside and cramp in our tiny living room, dining and kitchen area. i like to do it in our house because I serve them more food than the bowling alley. We are not allowed to bring any food except for the cake. They are only allowed to have 1 slice of pizza or hotdog and a cup of soda. At my house I can have a buffet of different dishes. Homemade Pancakes

Breakfast anyone? This was made with flour, sugar, salt, baking powder, baking soda, egg, milk and olive oil. Recipe is easy to find online. I always make small and big ones because the sausage can be easily wrap with a small pancake and makes "pig in a blanket" image below. My sad attempt to make a "pig in a blanket". However, my youngest son loves them. It does not matter what they look like, it matter to him what it taste like.

Beef Stew

This is a Cuban style beef stew. Just like I mention below DS is having May 5th celebration in school and I am not happy. I really don't mind the cooking but why are they celebrating someone else holiday? Anyway, enjoy the picture. I did not like the dish one bit, it gives me too much gas...burp! Oh my...excuse moi. I cooked this in a crock pot over night. It smelled soo good but I don't like the taste.

Not Enough Acid

My son is cooking (with my help) something for the cinco de mayo (pls don't get me started :( about the whole celebration thing) tomorrow. There are 20 kids in his class and everyone have something to share tomorrow. We made some kind of Cuban stew that has a lot of fruit (red wine, sherry, raisins and olives. I been tasting that thing after cooking for two hours now I have a very bad indigestion. I tasted the pemiento because well, I haven't tasted one before. It was very salty and sour now my stomach id killing me. Not to mention the capers and wines that we put in it. I post the picture after taking it when it's done. We are cooking it over night (maybe) under low heat in a crock pot. I'm off to eat some saltines or any crackers I can find to ease my stomach.

We (hubby and I) always wanted some camera around the house for our children. We don’t have 180 degree window and we can’t see them around the yard when they are playing outside. I know there are so many kinds in the market and the type we wanted is too much for our budget. Furthermore, the affordable once are simply affordable. I think it will only last a few rains and winds then straight to the garbage. I like quality rather than quantity because I like it to last longer. Seafood Linguni with Garlic Creamy Sauce

I been wanting to make this for the longest time. Finally I did it over the weekend. I mixed it with shrimp, clams, and scallops. A lot of minced garlic, 1 1/2 cups cream, 1/2 cup of Parmesan cheese and salt and pepper to taste. I think next time I will add some white wine, roma tomatoes, and clam juice. Enjoy the picture.

How Do I Love Thee

Let me count the ways... I have about 20 pairs of shoes maybe more when I was working. What can I say love shoes of colors, kinds and used. Below is what I use mostly for the summer months and around the house. It is very easy to put on and off. Not like snickers that I need to put socks tie and untie every time I want to use it. The below image is for special occasions. And sometimes when I feel like wearing a skirt at work and show some legs. The only time you will see me wear short skirts now is at home. I think I already past the mini skirt age. I could also use this on my sister in law's wedding in July. I'm not really sure what her theme is, but I'm sure black will go with any color. And this one I love for winter. You don't know how cold it gets where I am. Not as cold as northern Canada but cold enough for the people in northern US. I have another pair which I always used in the winter. Not as warm as this one but it does the job and I also wear it with a skirt

April Top EC Droppers

I wish someone can do the same thing as a blog network not for profit. I'm not even sure if I can get rid of my credit that fast.
