Sausage, Eggs & Cheese Breakfast Burrito

The sausage that I used is made from beef (remember we are cleansing our soul), but I don't know what part. At this point, I don't really want to know. This post reminds me of Spam retro images I saw not too long ago...lol. Anyway, this one is very easy to make. Heat the sausages and set on the side of the pan. Add some butter and scramble the egg s. When the eggs are almost done mix the sausage while cutting it with your spatula while mixing everything. I like it mix than just putting on top of each other. You can add salt and pepper if you like. However, I don't have a need for those because with butter and sausage, they are tasty enough for me. Furthermore, I added shredded mozzarella cheese before wrapping them up. Updated version with Sweet bell peppers. The next time I made some, I will add some sauteed sweet bell peppers. I like some kind of vegetables in my breakfast . My DH will settle with burritos with no sweet peppers. What do you like in your breakfast burri...

My Style Breakfast

Wow, I have not noticed until I upload the picture here that the egg is big. We are buying them from our local farmer and these are the large ones he sells. My mushrooms fried rice came out of a round mold instead of just thrown into the plate. This is how I like my breakfast, heavy and it keeps me full until lunch time and sometimes after lunch too, when I drink coffee with it. Don't get me started on what I put in my coffee...lol...bad for me of course. However, if I don't drink a cup in a day, I can't finish my children lessons without taking a nap. I try very hard to eat breakfast, it's the most important meal of the day. When I can't, I attest, I eat a lot more than usual. Breakfast is a must for someone like me. I also like it heavy to last longer.

Egg Salad Sandwich

This is DH favorite sandwich. He likes it swimming in mayonnaise. I like it with romaine lettuce and slice of tomato. (Do you notice that my hand is tan, yes indeed, even with all the rain we are getting I manage to put color on my skin...lol) A very simple sandwich with mash eggs, mayonnaise and white peppers ( I am using the all natural honey flax whole grain bread here). But since I made this for DH, there are only two ingredients (eggs and mayo). Sometimes I can get away with white peppers but he prepare not to have it. I read somewhere that peppers are good food blood circulation that is why I try to hide the peppers there for him. Don't worry about the cholesterol, I read at Dr. Douglass site that cholesterol are good for us and don't believe whatever FDA said about it. I can 't even begin to tell you about the food pyramid being wrong all this time. Oh well, it will be in another post.

Bacon, Egg & Garlic Fried Rice

Is this what we call "basilog" back home?...lol. I do love eggs that are medium well, not well done. Did you know that eggs turns rubbery when over cook and they smell funny too? The fried rice consist of garlic, onions, salt and pepper. The egg is cook with butter and chewy bacon's. Enjoy!

Breakfast Sandwich

Like I said in my last post, I will try the breakfast sandwich my ODS makes with my omelet. With this sandwich I added bacon and I used Provolone cheese. Very filling I may add, I almost couldn't finish the sandwich and the bagel is small, it not the same size of what you buy from Dunkin Donuts (much smaller). I used bagel, scramble eggs, Provolone cheese and bacon. I melted the cheese over the eggs in a toaster oven.

Omelet In My Kitchen way

Here is my breakfast this morning. Egg omelet with saute onions, tomatoes, and ham. ODS makes a sandwich out of it. He uses toasted bagel and add a slice of cheese. I have not try it yet but, I think I will tomorrow. TGIF from " My Kitchen ".

Preserving Eggs

I've done salted eggs while I was in high school. We used chicken eggs and the batch we boiled I think 2 were cracked. Now I read that duck eggs are the best to use because the shell is harder to break. I also read that somewhere in the Philippines they use clay to wrap the salt and raw eggs. Keep it indoor for about 15 days then wash, cook and should last about 40 days. That is a very short time when trying to put away food for a year use. Maybe it will last longer inside the fridge. But if I don't have an electric it can't be done. Maybe I can try doing pickled eggs instead. I haven't try them and I don't even know how they taste. However, if they need to sit in the fridge to become pickle that will not do either if there is no electricity. Is there any other way to preserve eggs? How about the quail eggs I find in Asian store, anyone know any other ways to process/preserve eggs?

Vegetable Omelet

This one is made with two beaten eggs, diced onions, diced ham, and diced tomatoes. First warm up the pan and add butter. Cook the diced onions until translucent. Add the diced tomatoes and pour the beaten eggs on top. Cook one side until you are able to flip the eggs to the other side. Continue cooking until you have the right consistency. Don't burn it, the egg would smell bad. You can add all the vegetable variations you can think of. My oldest son and I like just 3 things in them. But I know a lot of people like mushrooms, cheese, bell pepper and lots more. Experiment on what you think you would like. Enjoy.
