Pineapple Jam

Another copy-cat canning of mine. 😃 When it comes to american food I don't have my own recipe. Since everyone was talking about pineapples on sale what else am I going to do. Make stuff with on sale pineapples and here is one of them. If I have a lot friends this thing will be a seller. But since i don't, well, this will be in my pantry until i eat them. I enjoy making things in the kitchen, who knows maybe I will open a little bakery in my house since this property is still considered a business property. Something to think about to earn the payment for my very expensive property tax.

Strawberry Sauce

I love Cheese Cake and I never eat it with any toppings. I only do toppings when my family goes to a gathering and have to bring a dish. So with this homemade strawberry sauce I can finally eat some with toppings. I'm not really sure if I will like it, but hey, it's worth a try. Plus I got these strawberries really cheap so, why not. I used the low sugar pectin for this. I wish I can make my own pectin but my apple trees are barely alive because of caterpillars and deers. I finally got the caterpillars in control this year, but since it was getting bushy with leaves the deer can't help themselves but eat it. So, before they sprout again next year i will put a fine nettings on all of them. That will stop the caterpillars and deers from eating the leaves. And maybe, maybe it will be healthy enough to flowers and fruits.

Dandelion Jelly

I recently joined some group online. I'm not really active on any of them but I do learn a lot. And this is one of them during spring this year. Everyone was talking about picking dandelion blossoms and making it to anything they enjoy. And since I haven't tried dandelion jelly before, I told myself, why not. I even gave one jar to one of my DH co-worker because he said he heard about it and wanted to try it. I am very eager to share especially to the young generation that knows a little about wild plants medicinal benefits. I picked about a bucket full, removed all the greens (well sort of), seep in hot water over night and made the jelly the next day. I could have easily made two batches, but since I am the only one who tries anything around my household I only made one batch. You can find a lot of recipe online, I don't have to share one here. My recipe is only mine because I'm a little rebel when it comes to my own usage of can or preserves items. L...

Salsa Dip

My first year making canned salsa. I made a batch a long time ago using a mix packet and refrigerated. I am not too happy with this one. Maybe I am missing something. I have to look for a mix at my local grocery store. I have to open them all up, mix in the salsa packet, reheat then reseal.

Bread & Butter Pickles

I made two different ways. DH pointed out that the slices are hard to fork out of the jars. My next batch was wedge bread and butter pickles, of course. I will not post the ingredients here because you can easily find everything online. I made one batch of slices, and two batches of wedges because DH preferred the second one. I was thinking of making more but my cucumbers had others plans. They ripen on me when I wasn't looking for a week. hehehe

Preserve Roasted Bell Peppers

These bell peppers took forever to grow, fruit, and ripen. I been wanting to make roasted bell pepper cream sauce. Hopefully I can finally make it this winter. I sliced them after roasting and removing the skins. Stuff them in jars along with sprigs of rosemary fresh from my garden also, garlic, and filled with olive oil. Keep in the fridge before using.

Homemade Tomato Soup

My schedule gotten hectic, after I made this last September. We empty my in laws' house to be sold and many things happened. I finally got a chance to visit my google account  and here I am. Updating a few blogs of mine. This is my very first time making tomato soup, tomatoes came from my garden. I had to watch them carefully because my yard/garden was the deer route in my area. And not thinking, I put a knee high fence around it. Hah! I say...hahaha... Those deer are taller than me and they can easily step over the fence. Yap, they ate most of my tomatoes, and anything in it. The recipe says' that I should have six or seven pints. Can you see how much I end up from that recipe...hahaha... Did I mention my very first time making this? Yap, exactly. :D

Fruit Trees are Flowering

I am looking for plenty of canning to do when fall comes...hopefully. Most of my fruit trees survived winter. The only ones that has no flowers as of yet are the apples. The peaches are doing very well and the very first ones to flowers. Then there are plums, and one of the pear. I wish for the bees to pollinate them. The weather is pretty nice and should (I hope) continue to next week. That's plenty of time for the bees to wake up and start sucking nectar from the flowers. I am crossing my fingers. I need to buy more jars and collect some recipes for the fruit trees on how to preserve (or the best way) them.
