Salad With Raspberry Cream

Image
I got the recipe from Southern Living, thanks. Of course with somethings omitted because I do not like it. I made this for thanksgiving and our guests hardly touch it. I ate the left over for two days hahaha. Anyway, I like it with spring mix and I buy the lettuce separately and mix it myself. I don't like the pre-mix. I used the pre-mix when I made this on thanksgiving. No more pre-mix for me, yuck! Ingredients 3/4 c sour cream 1/4 c raspberry preserves 3 tbsp red wine vinegar 1/8 tsp Dijon mustard (I added some honey here) 4 firm, ripe pears (this I omitted because I don't want to eat pears with salad) 2 tbsp lemon juice (for the pears slices) 1 head Bibb lettuce, torn * 1 small head romaine lettuce, torn * 1/2 c freshly shredded Parmesan cheese 6 bacon slices, cooked & crumbled 1/2 fresh raspberries (I put more because I like it) Preparation Whisk together the first four ingredients. Set aside. Peel Pears, if desired; quarter pears, Brush with lemo...

Salad

I got very hungry all of a sudden after doing my everyday workout, ten minutes for hard boil egg while I am rinsing & cutting the vegetables. Quick enough for me and very filling. Garden salad with egg & Caesar dressing. Just to clarify, I workout so that I can eat everything I want.

Tips on Making Salad

I like to be organize. Well, I can say that I was very organized before I met DH. It is easy to do so when I only have to do it for two people. My ODS and myself. Now, add another person to the picture will be hard, specially when one does not follow it and always wing it. When one does all the planning and the rest just wait to be told is very hard. Now-a-days meal planning is next to impossible. I will asked what they want to a meal. Most will answer, "I don't know." Well, that will not solve anything. They end up just eating what is ready to eat (mostly like junk food). And whatever food was cooked will never get touch and end up rotten and wasted. Anyway, let's get back to my title. Most of the time DH will come to the kitchen hungry because his answer was, "I don't know." I don't usually pre-cut romaine lettuce because I am not organize anymore. So, what I do is, rinse the lettuce in ice water. It makes the lettuce instantly crispy. If you are a...

Anything Salad

Image
Anything I like in it salad, is more like it. Butter and garlic croutons, breaded chop chicken, carrots, Romain lettuce, and my favorite salad dressing...creamy Cesare dressing. My tip is to make a whole lot for a meal, make sure to eat it within 10 minutes. Yes, a little hard to do myself, however the point of eating it all in 10 minutes is because salad is very light. If you only eat a little, you will feel hungry right away. And if you past 10 minutes, you can't eat it all because your stomach feel full. So, you need to eat it fast to trick your stomach to eat all of it. I hope I make sense here...ha ha ha.

Napa Cabbage Salad

Image
3 packs Ramen Noodles (raw, discard the seasoning) 5 oz. sliced Almonds 1 butter stick I head Napa cabbage 2 bunches scallions (optional) 1/2 c Cider vinegar 3/4 c brown sugar 2 tbsp soy sauce 3/4 c Olive oil Break raw Ramen noodles into pieces. Saute noodles and almonds in butter until lightly toasted. Chop cabbage. Finely chop scallions. Combine vinegar and sugar in a sauce pan. Stir over low heat until sugar is melted. Combine with soy sauce and Olive oil. When ready to serve, toss all ingredients. When I serve it at home, I keep everything separated, and who ever wanted some, they can make their own servings. I like to keep the noodles and almonds crunchy. You should try this.

Alaska Salmon Rice Pilaf with Bacon, Peas, & Mint

Image
I got this recipe from a magazine. My family did not like it much and I had to eat all of it myself and I think the first and last time I'll be making it. 1 can (14.75 oz.) or 2 cans (7.5 oz. each) traditional pack salmon or 2 cans pouches (6 to 7.1 oz. each) skinless, boneless salmon (I use a left over salmon with this recipe) 2 tsp. olive oil ½ cup finely chopped onion 1 garlic clove, minced 4 slices bacon, cut into pieces 1-1/4 cup long grain rice 1 tsp. ground cumin 1 tsp. ground chili powder 2 chicken or vegetable stock cubes, dissolved in 3-3/4 cups hot water (I use the stock in a can) ¾ cup frozen peas 1 Tbsp. chopped fresh parsley or mint Salt and freshly ground black pepper 2 Tbsp. finely grated Gruyere, Parmesan, or Cheddar cheese, if desired Drain salmon, reserving liquid. Discard skin and bones (if any). Break salmon into chunks and set aside. Heat olive oil in a large frying pan. Add onion, garlic, and bacon. Cook over medium heat for 5 to 6 minutes, until onion is bro...

Caprese Salad "In My Kitchen"

Image
I found some fresh mozzarella cheese at my local grocery store and I decided to make these. Just a little of black pepper and olive oil and yum. I had to buy the fresh basil, because mine in not that big yet. Plus, I wanted mine to flower to get some seeds to use for next year. I put the basil where kids seat on the cart and every time I looked at my grocery lists I can smell it. They smell soo good.

Garden Salad

Image
This is DH favorite salad. I used Romaine lettuce and carrots. Yes, that is what he wants in his salad along with cook ham cubes, croutons and thousand island dressing. He will also take it with garlic bread. He does not like tomatoes, cheese or hard boiled eggs on them. Two ingredients and he is happy, he will be very happy as well if I just feed him cake, cookies or anything sweet for his meal. That is diabetic waiting to happen.

Caesar Salad (my way)

Image
Once in a while I go into the rabbits diet, especially when warm weather hits. One of my favorite salad is Caesar salad. I make it with Romain lettuce (cut-up and chilled), cherry tomatoes, croutons, grated Parmesan cheese and creamy Caesar dressing. Sometimes I make Grilled Chicken Caesar salad, the only difference is I added grilled chicken cubes. I also do this diet right after a birthday party, Holiday feast or a cook out with one of our family and friends. Eating light after these occasions makes my stomach feel normal. Have a serving, there are plenty for everyone. Enjoy!
