Apple Cobbler
We went to our local apple orchard on October 12. We didn't stay very long because the kids filled up our bushel too fast. We could have picked more but we can't eat all those apples before they get bad. Anyway, today I baked another apple cobbler, since the one DH made a week ago wasn't that great.
4 medium tart cooking apples, slice (4 cups)
3/4 cup packed brown sugar
1/2 cup whole wheat flour
1/2 cup quick-cooking oat meal
1/3 cup butter, softened
3/4 tsp ground cinnamon
3/4 tsp ground nutmeg
Heat open to 375°F. Grease bottom and sides of 8-inch square pan with butter. I used ceramic baking dish and it works fine without butter. Spread apples slices in pan. In medium bowl, cream the butter an sugar until well blended. Add the rest of the ingredients, e.g. flour, oats, cinnamon and nutmeg. Mix until blended, sprinkle over apple slices. Bake for 30 minutes or until toppings is golden brown and apples are tender. Serve warm, you can also serve it with ice cream.
