I found this widget quite funny and interesting at the same time. Her shows make me laugh because the way she talks. She has this look on her face almost looks like she is joking about the whole thing. However, if you watch the whole thing everything they do are for real. Homemade Waffles
I have this waffle maker as long as I have my oldest DS. I think I only use it once for that long. My 2nd DS ran out of waffle one morning and DH help me to make some from scratch. Now I can say I used the waffle maker twice. It's a pain cleaning it, that is why I hardly use it.
This batch I put in the freezer for later use. I did not decorate any of them just to show here. I know that most of you know how to dress your waffles...lol. Maybe next time when I have plenty of time I will dress them up for show here in my blog.

General Tso's Chicken Stir Fry
This look very similar to sweet and sour chicken, however, there is no pineapple included with this recipe.
Cut boneless and skinless chicken into cubes. Do same thing with red or green bell peppers, carrots, and onion. Put 1 tbsp olive in a pan on medium heat. Cook the chicken until no longer pink. Remove from the pan and set aside. Add another 1 tbsp olive oil in the pan and stir fry the vegetables for about 5 minutes then add the chicken back into the pan.
Add General Tso's sauce and mix until blended. Serve over hot rice or by itself. Really nice to have in these cold days.

Grilled Ham with cheese & tomato
My lunch a few days ago, a homemade panini my way. It's a little heavy in the stomach. I used 100% all natural whole wheat bread, cheese, tomatoes and ham. It's good and ODS know how to make it also. Now he knows a few recipes to survived college 1 1/2 year from now.

Spaghetti
A very common and easy meal to make. Even my 17 year old son can make this. However, I never make spaghetti with only pasta and sauce. I can't stand it because it should mix with some kind of protein when cooking it. DH always ask if I made it with meat sauce. And I always tell him that I never make spaghetti without meat. After 9 years do you think he will remember...nope...ha ha ha.
I don't know how to make my own spaghetti sauce yet. I always buy them from the store and mix it with vegetables and ground beef. Right now we are still using the organic beef that our friend sold to us. More often I feel bad buying none organic meat in my local grocery store, like chicken and pork. I still use a lot of pork and chicken because 2 of my DC loves egg roll and ground beef have a different taste than pork. And all of us loves chicken recipes except for DH. It would be very helpful if we can grow our own chicken, cow and pig, in that order too...ha ha ha.

Ripe Jackfruit (Langka)
One of tropical fruits I miss the most. Winter season is always the worst when missing them. All I can get are the cans with added sugar in them. Sometimes I get the ones that are over ripe it's very soft. I like it when there is still some crunch on them.
My parents have a several jackfruit trees on on their property and all we have to do is wait for them to fruit and pick when when ripe. Ahh, those are the days.

These are perfect, fresh and still have some crunch on them. I miss living in the tropic.

Action All Stars


I have a selection of free games online, and they love all of it including ActionAllStars.com. They enjoyed making their own characters and dressing them up. They don’t play baseball or basketball in real life, but at least they can experience it virtually. I believe that our home should be the safe place for the children. This is also the same reason why I teach two of my school kids at home. Who said you can’t have fun in your own home? Not in this home and check out the screen shot of my avatar named Akoito.

Rice Noodles
One way I cook rice noodles. I think I really need a better camera. This thing came out really dark, (I even fixed the color with office picture manager but no luck.)
I mixed this with pork slices, julienne carrots, julienne cabbage, onion, garlic, soy sauce, pepper and beef broth. The egg slices are for decoration. Enjoy!

Have A Blessed and Prosperous New Year
Eat, put anything round on your dining table, make a lot of noise, put some coins in your pocket for goodluck, open a window to welcome the New Year (this would be nice when you live in the tropics, doing it here up north will bring icicles inside he he he), however you celebrate New Year make sure to spend it with your family and be safe.
