More Sitaw To Freeze

This is my harvest from yesterday August 30th. If we don't get any warm nights I think these will be the last good harvest I'm having. Behind are my roma/plum tomatoes waiting to be canned. I can't seems to find preserve jars in the store. I will try BJ's tomorrow or Target. Hopefully they have some. I really need to preserve some of the tomatoes for my winter use. Wish me luck.

Okra With Tomatoes

I always like Okra with tomatoes or simply boiled Okra with soy sauce on the side. Very easy to make than deep fry. All I did was, put chop onions, crush garlic, peeled & diced tomatoes and okra in a small sauce pan and let it cook. Add salt and pepper to taste. You can eat by itself or over pasta or rice.

Sweet Potato

Sweet potato tops (talbos ng kamote) I bought it from the store for Christmas last year and the left over I let it sprout and on spring I planted them in my garden. This is the flowers looks like. Already blanch and cooling in cold water. I used sandwich bags to separate them. One bag is one meal for us. I put them in bigger freezer bags before freezing.

Too Much

Here is my harvest today. I blanched them all and freeze for later use. It filled up my biggest pot. Here they are cooling in ice water. And ready to go in the freezer.

Sour Cream & Chives Baked Potato

This is very easy to make. Just make sure you buy the baking potatoes not the other kind. Just wash them and bake in 375 degree oven for 1 hour. You don't need to wrap them in aluminum foil. Aluminum foil is bad for you when heated next to your food. Don't use them when cooking. With this you can put any toppings you like. The picture above is topped with sour cream and chives. I also like it with broccoli and melted cheese, bacon bits and melted cheese, butter, and chili and melted cheese. Enjoy!

Chicken Afritada

I used chicken wingets with this recipe because I know my DH likes them. And I don't like using big chicken part either. I used one pound of chicken wingets, 2 potatoes, cut into quarters, 1 cup baby carrots, one onion cut into quarters, one garlic clove chops, half of red bell peppers and half of green bell peppers cut into chunks, 2 cups chicken broth, 1 can (8 oz) tomato sauce, 2 tablespoons fish sauce (patis), 2 tablespoons olive oil. In a cooking pot, heat oil. Saute garlic and onions. Add chicken and coook until slightly brown. Pour the tomato sauce and chicken broth. Bring to boil and allow to simmer for 20 minutes or until the chicken is almost cooked. Add potatoes and continue cooking for 5 minutes then add the carrots cook for another 5 minutes or until potatoes and carrots are cooked. Add the green and red peppers, simmer for additional minute or two. Salt and pepper to taste and add green onions on top before serving. Serve hot with rice. (DH never like stew, anything w...

Vegetables Fried Rice

I put every left over vegetables in my fridge that is not enough for one meal for all of us. I saute chopped onions, garlic, celery, broccoli, green beans and then I add fried scramble eggs, sausages, and tuna from the can. Salt and pepper to taste and green onions as a garnish. Yummy! My family loves it except my DH who does not like fish without any mayonnaise or butter. If I don't put tuna with this he will eat it with no problem.

Veggies With Shrimp Paste

Veggies with shrimp paste (Ginisa sa bagoong na alamang) and sometimes adobo or ginataan, this how I usually cooked the veggies I harvested from my garden. I already harvested 4 times, but the last two I had to blanched half of it because they are too much for the three (me, DD and youngest DS) of us to consume. I'm not sure how they will taste later, but the raising food prices (dollar getting weaker everyday worthless ) I don't have any choice but to eat it.

Vegetable Omelet

This one is made with two beaten eggs, diced onions, diced ham, and diced tomatoes. First warm up the pan and add butter. Cook the diced onions until translucent. Add the diced tomatoes and pour the beaten eggs on top. Cook one side until you are able to flip the eggs to the other side. Continue cooking until you have the right consistency. Don't burn it, the egg would smell bad. You can add all the vegetable variations you can think of. My oldest son and I like just 3 things in them. But I know a lot of people like mushrooms, cheese, bell pepper and lots more. Experiment on what you think you would like. Enjoy.
