Boneless and skinless chicken breast (thin slice or you can buy the ready to eat type), cooked in olive oil for a minute both side. Then cut into strips and mix it with salsa dip. Green and red bell peppers cut into strips. One small onion, sliced. Put 2 tbsp of oil in a pan and add the peppers. When the pepper is on your desire tenderness add the onion until transparent. Add salt, pepper and cilantro.
I am using burrito wrappers for this one.On a cookie sheet put one tortilla. Spread the chicken on the tortilla add the mixture of peppers and onions, arrange them nicely if you so every bite have vegetables. Put shredded cheese on top. You can use mozzarella, cheddar or the pre-mix taco cheese. Cover it with another tortilla. Put in the preheated 375 degree F oven for 5 minutes or until the cheese melts. Cut it like a pizza if you like. You can also use some salsa to dip the quesadillas. Enjoy.
