Rice Cup Cakes (Puto)
Did you know that you buy the mix from you local Asian store. That is what I'm using to make puto these days. I tried making it the old fashion way, but it always comes out very heavy and never raised. I tried adding water on the rice flour because I don't know what to used to ground wet rice. I don't think blender can do it fine enough.
Here is the recipe the old fashion way:
2 cups rice, soaked overnight and ground with 2-1/2 cups water
1-1/2 cup white sugar
3 tsp baking powder
1/2 tsp salt
The ground rice should have the consistency of thick batter. Add the sugar, salt and 1 tsp of baking powder for every cup of mixture. Fill molds 2/3 full with mixture. Arrange in steamer and steam for half an hour or until done. It is done when toothpick inserted into it comes out dry or clean. Remove from molds and serve with grated coconut or margarine on top.
